Fast food türü besinlerde kullanılan katkı maddelerinin organizmada anormal değişikliklere yol açtığını da belirten Dr. Courtney Van de Weyer, "Bu sebeple insanlar; omega 3 ve omega 6 gibi faydalı yağ asitleri yeteri kadar alamıyor. Bu dengesizliğe vitamin ve mineral eksikliği de eklenince, hafıza problemleri ve depresyon ortaya çıkıyor. Daha ileri dönemlerde ise alzheimer ve şizofreni belirtileri ortaya çıkmaya başlıyor" diyor.
